What happens to the extra power your panels make?

Net metering is how your utility credits you for it, so it offsets what you pull from the grid at night. Or, if you add a battery, you store that extra solar and run your home on it after dark instead of buying power back. APS and SRP each handle credits differently and the rules change over time, but the short version is the same: the more of your own sun you use, the less you buy from a utility whose rates keep climbing.
